Ingredients: Char-Grilled Fresh Eggplant, Tahini Paste, Lemon Juice, Crushed Garlic and Salt.

For Garnish Olive Oil, Pomegranate, Parsley.


3-Cucumber Yogurt (Tzatziki):

Ingredients: Shredded Cucumber, Plain Yogurt, Crushed Garlic, Dry and Chopped Fresh Mint, Chopped Shallot, Sour Cream and Dill (Optional).


4-Spinach Dips:

Ingredients: Chopped Spinach, Water Chestnuts, Dry Leek Soup Mix, Sour Cream, Mayo, refrigerate for at least 6 Hours, Served in Round Sourdough Bread.


5-Cheese Rolls:

Ingredients: Egg Roll Package, Feta and Mozzarella Cheese, Chopped Onion and Parsley, Chopped Fresh Mint and Thyme, Salt and White Pepper, Beating Egg for Rolling Egg roll, Sunflower Oil for Frying. Garnish with Fresh Mint and Thyme Leaves.


6-Kebbeh Ball:

Ingredients: crack wheat White # 1 (Burghul) Water Soaked, Ground Beef 95% Lean, Seven Spice, All Spice, Nut Meg, Cinnamon Powder Black Pepper and Salt.

Stuffing: 85% Ground Beef, Sautee Onion, Pine Nuts, All Spice Cinnamon Powder, Nut Meg Powder.


7-Spinach Pies: With or Without Feta Cheese:

Ingredients: Chopped Fresh Spinach, Chopped White Onion, Dry Mint, Lemon Juice, Olive Oil, 

Sumac Powder, Pine Nuts, and Cheese (Optional).

 

 

 

8-Meat Pies

Ingredients: Dough: All Purpose Four, Dry yeast, Milk, Water, Sunflower Oil Salt and Sugar.

Stuffing: Ground Beef 85%, Sautee Onion, All Spice, Seven Spice, Cinnamon Powder, Yogurt, Sunflower Oil for Frying or add Tomato and Chili to the Stuffing and Baked as an Open Square.


9-Taditional Chicken Tender:

Ingredients: Chicken Tenderloin, Egg Beaten with Water, Cayenne Powder, Black Pepper, Italian Style Seasoned Crumb and All Purpose Four. Sunflower Frying Oil At #75 Degree.

Dipping: Mayonnaise, Horseradish, Sour Cream, Worcestershire Sauce and Mustard.


10-Trditional Mozzarella Sticks:

Ingredients: Mozzarella Cheese Low Sodium, all Purpose Flour, Egg Beaten with Water, Italian Style Seasoned Bread Crumb, Served with Home-made Marinara Sauce.


11-Home-made Salsa:

Ingredients: Chopped Tomato, Chopped Green Pepper, Diced Onion, Minced Fresh Cilantro, Fresh Lime Juice, Chopped Fresh Jalapeno Pepper (Including Seeds), Cumin Powder, Kosher Salt and Black Pepper.


12-Bruschetta:

Ingredients: French Baguette Bread, Cherry Tomato, Chopped Fresh Basil, Chopped Fresh Mint, Sliced Shallot, Olive Oil, Balsamic Vinegar and Parmesan Cheese Shredded.


13-Shrimp Cocktails:

Ingredients: Poaching Liquid:

Cold Water, Sliced Onion, Fresh Lemon, Bruised Garlic, Fresh Tarragon, Seafood Seasoned (Old Bay), Whole Black Peppercorn, Bay Leaf.

Ingredients: Bamboo Skewers, Fresh Mozzarella Cheese, Cherry Tomato, Artichoke cut in quarter.

18-Grape Leaves Stuffing with Vegetables:

Filling: Sunflower Oil, Onion Finely Chopped, Chopped Parsley, Ground Beef or Lamb, Paprika Pepper, Ground Coriander, Pinch of Ginger Powder, Egg Beaten.

Ingredients: Large Eggplant, Mozzarella Cheese, Large Basil Leaves, Plum Tomato, Salt and Pepper.

Dressing: Olive Oil, Balsamic Vinegar, Sundried Tomato Paste, Lemon Juice, 

Garnish Toasted Pine Nuts and Basil Leaves.


39-Potato Cake:

Ingredients: Boiled Potatoes and Mashed, Feta Cheese, Scallions Chopped, Chopped Basil, Egg Beaten, Lemon Juice, Salt and Pepper, All Purpose Flour, Olive Oil.


41-Zucchini Fritters with Pistou:

Ingredients: For the Pistou: Basil Leaves, Garlic Cloves Crushed, Grated Parmesan Cheese, Finely Grated Zest of Lemon, Olive Oil.

For the Fritters: Zucchini Grated, All Purpose Flour, Egg Separated, Olive Oil, Oil for Shallow Frying, Salt and Pepper.


42-Eggplant Parmigiana:

Ingredients: Eggplant Thinly Sliced, Olive Oil for Brushing, Mozzarella Cheese Sliced, Freshly Grated Parmesan Cheese, Bread Crumbs, Salt and Pepper, Basil Sprigs to Garnish.

For the Sauce: Olive Oil, Finely Chopped Onion, Garlic Cloves Crushed, Chopped Tomato Can, Sugar, Basil Leaves.
 

43-Meatballs with Mozzarella & Tomato:

Ingredients: Sliced White Bread (Crusted Removed), Milk, Ground Beef, Egg Beaten, Bread Crumbs, Vegetable Oil for Frying, Chopped Fresh Oregano, Mozzarella Cheese cut into Sliced, Salt and Pepper.

Ingredients: Cottage Cheese, Lima Beans Can rinsed and Drained, Scallions Chopped, Watercress Chopped, Mayonnaise, Chopped Fresh Mixed Herbs, Watercress and Cilantro Sprigs to Garnish.

46-Crispy Spring Roll with Sweet Chili Sauce:

Ingredients: Rice Vermicelli Noodle, Peanut Oil, Finley Grated Fresh Ginger, Scallion Finely Shredded, Carrot Finely Shredded, Snow Peas Shredded, Spinach Leaves, Fresh Bean Sprouts, Fresh Mint Finely Chopped, Finely Chopped Cilantro, Light Soy sauce, Spring Roll Wraps, Egg White Lightly Beaten.

For the Dipping: Sugar, Rice Vinegar, Fresh Red Chili Seeded and Finely Chopped.


47-Asparagus Rolls with Herbs Butter Sauce:

Ingredients: Sheets of Phyllo Pastry, Butter Melted, Asparagus Trimmed.

For the Sauce: 2 Shallots Finely Chopped, Bay Leaf, Dry White Wine, Chopped Fresh Herbs, Salt and Pepper. 

Chopped Chives to Garnish.
