1-Baked Sea Bass with Tahini and red Sauce:

Ingredients: Whole Sea Bass Fish, Fresh Lemon, Tahini Paste, Minced Garlic, Chopped Onion, Chopped Cilantro, Diced Tomato, Crushed Tomato, Coriander Powder, Cumin Powder, Bay Leaves, Salt and Black Pepper, Olive Oil.


2-Grilled Sea Bass with Fennel:

Ingredients: Sea Bass Weighing and Cleaned, Olive Oil, Fennel Seeds, Fennel Bulbs Trimmed and Sliced, Pernod, Salt and Black Pepper.


3-Pan-Seared Tilapia Fillet:

Ingredients: Tilapia Fillet, Olive Oil, Unsalted Butter, Flour, Salt and Pepper, Lemon Wedges.

Served with Steak Fries and Sautee Vegetables.


4-Pan-Fried Red Mullet with Tarator Sauce:

Ingredients: Whole Red Mullet Cleaned, Egg Beaten with Water, Flour, Bread Crumbs, Salt and Black Pepper, Vegetable Oil for Frying.

Tarator Sauce: Tahini Paste, Lemon Juice, Minced Garlic, Chopped Parsley, Salt, Dry Mint, diced Fresh Tomatoes. Lemon Wedges to Serve.


5-Moroccan Paella:

Ingredients: Chicken Breast Boneless cut into Cubes, Prepared Squid, Raw Jumbo Shrimp Shelled, Scallop Trimmed and Halved, Raw Mussels in Shells, Long Grain Rice, Sunflower Oil, Scallions cut into Strips, Zucchini cut into strips, Red Bell Pepper cut into Strips, Chicken Stock, Tomato Puree, Salt and Pepper, Sprigs Cilantro, Lemon Wedges to Garnish.

For the Marinade: Red Chiles, Fresh Cilantro, Cumin, Paprika, Crushed Garlic, Olive oil, Sunflower Oil, Lemon Juice.


6-Seafood Risotto:

Ingredients: Sunflower oil, Chopped Onion, Garlic clove Crushed, Arborio Rice, White Wine, Hot Fish Stock, Mixed Seafood (Shrimp, Mussel, Squid or Clam), Lemon Zest, Tomato Paste, Chopped Fresh Parsley, Salt and Black Pepper.


7-Italian Shrimp Skewers:

Ingredients: Raw Shrimp Peeled, Olive Oil, Vegetable Oil, Dry Bread Fine Crumbs, Chopped Fresh Parsley, Salt and Black Pepper, Lemon Wedges to Garnish.


8-Shellfish & Mushroom Risotto:

Ingredients: Olive Oil, Chopped Onion, Wild Mushroom trimmed and Sliced, Arborio Rice, Chicken or Vegetable Stocks Boiling, White Wine, Raw Shrimp Peeled, Live Mussels, Clams, Medium Squid Cleaned Trimmed and Sliced, Chopped Parsley and Chervil, Celery Salt and Black Pepper, Cayenne Pepper, Bread to Serve.


9-Rosemary Salmon with Creamy Spinach:

Ingredients: Fillet of Salmon, Chopped Fresh Rosemary, White Pepper, Kosher Salt, Crushed Garlic, Olive Oil, Chopped Fresh Spinach, Heavy Cream, Half & Half, Chopped White or Yellow Onion, Melted Butter, Rosemary Strips to Garnish, Baked Rosemary Potato Wedges to Serve.


10-Shrimp and Salmon Kabob:

Ingredients: Raw Shrimp Peeled, Fillet Salmon Skinless cut into 2inch cubes, Crushed clove Garlic, Lemon Juice, Olive Oil, Chopped Parsley, Bell Pepper cut into cubes, Salt and black pepper, Chopped Cilantro, Cumin Powder, Mayonnaise, Mustard, Lemon Wedges to Garnish, Basmati Rice or Salad to Serve.


11-Shrimp Scampi with Pasta:

Ingredients: Linguine Pasta, Butter, Extra Virgin Olive Oil, Shallot Finely Diced, Garlic Minced, Red Pepper Flakes, Shrimp Peeled and Deveined, Kosher Salt and Black Pepper, Dry White Wine, Lemon Juice, Butter, Olive Oil, Chopped Fresh Parsley. Olive Oil and Garlic Bread to Serve.


12-Pan-Sautee with Bearnaise Sauce:

Ingredients: Tilapia Fillet, All-Purpose Flour, Melted Butter, Olive Oil, Salt and Black pepper.

Bearnaise Sauce: Butter, Minced Garlic, White Wine Vinegar, Egg Yolk Beaten, Heavy Cream, Lemon Juice, Dried Tarragon, Chopped Fresh Parsley, Salt, Dry Mustard, Cayenne Pepper.   


13-Shrimp Creole:

Ingredients: Vegetable Oil, Julienne Celery, Chopped Onion, Crushed Garlic, White Sugar, Flour, Salt, Black Pepper, Cayenne Pepper, Tomato Crushed can, Tomato Sauce, Bay Leaf, Hot Pepper Sauce, Shrimp Peeled and Deveined.
